Toast Flour Broth
Ingredients
1 ½ liter of Freshly boiled water
4 tablespoons of Toasted flour
4 Eggs
1 Diced onion into small cubes
Aji de color (spice blend or coloring)
Oregano
Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Add a little oil to a medium pot and sauté the diced onion, aji de color, salt, and pepper to taste over low heat for about 5 minutes.
Step 2 : Bring the water to a boil and immediately add it to the pot, then add the oregano and toasted flour. Stir gently and let the broth boil for 2 minutes.
Step 3 : Separate the egg whites and add them to the just-boiled broth, without stirring. In a separate dish, mix the yolks with a tablespoon of cold water.
Step 4 : Add the yolks to the pot, stirring gently to incorporate all the ingredients.
Step 5 : Let rest for 2 minutes and serve immediately.
