Ingredients

2 tablespoons of Olive oil

2 Chopped onions

2 Chopped garlic cloves

900 grams of Cubed pumpkin

1 ½ liter of Vegetable broth

30 milliliters of Orange juice

2 tablespoons of Thyme

150 milliliters of Milk

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : /In a pot with the oil, sauté the onion until soft

Step 2 : Then, add the garlic cloves and pumpkin and sauté everything for about 2 minutes (stirring constantly)

Step 3 : Next, add the vegetable broth, orange juice, and thyme.

Step 4 : Cover the pot and let it cook for 20 minutes or until the pumpkin is very soft when pierced with a fork

Step 5 : Puree the soup in a blender, season with salt and pepper, and return the cream to the pot, add the milk, and cook for about 5 minutes

Step 6 : Serve with parsley
