Chilean Menestrón
Ingredients

6 cups of Vegetable broth
100 grams of Pasta
2 cups of Beans
6 Potatoes
2 Tomatoes
1 Broccoli
2 Onions
2 Carrots
8 Garlic cloves
1 cup of Spinach
4 Basil leaves
2 teaspoons of Oregano
2 teaspoons of Paprika
2 teaspoons of Vegetable oil
45 grams of Grated cheese
Preparation
Step 1 : Wash, peel, and dice the onion, while slicing the spinach and broccoli into strips.
Step 2 : Also, cut the potatoes and tomatoes into cubes, and slice the carrots into rounds.
Step 3 : Preheat a pot with a tablespoon of oil, and once hot, add the onion, carrot, and garlic cloves.
Step 4 : Sauté for a few minutes, then add the potatoes, chili, salt, and oregano to taste.
Step 5 : After mixing well, add the basil leaves and four cups of broth.
Step 6 : Once boiling, add the chopped tomatoes along with the remaining two cups of broth.
Step 7 : Next, add the pasta, cover the pot, and cook for six minutes.
Step 8 : Meanwhile, cook the beans separately, and once ready, blend half of them in a food processor or mash manually.
Step 9 : Add the bean purée and the remaining whole beans to the cooking pot, along with broccoli and spinach.
Step 10 : Cook for an additional 10 minutes.
Step 11 : After removing from heat, serve in individual bowls, optionally adding grated cheese before enjoying the meal.
