Ingredients

1 Beef foot

3 Garlic cloves

1 cup of Semolina

1 Paprika

1 Onion

1 Grated carrot

Oregano

1 pinch of Salt

Merkén

Cilantro

Oil

Preparation

Step 1 : Wash the beef foot, place it in a pressure cooker, and add the halved paprika along with the garlic. Cover with cold water and cook for 30 minutes.

Step 2 : Sauté the onion, the remaining chopped paprika, and add oregano until golden.

Step 3 : Add the semolina and let it cook for a few minutes.

Step 4 : Add salt to taste, grated carrot, and a little merkén. Cook for a few more minutes. Remove the beef foot from the pot and cut it into pieces.

Step 5 : Serve the broth very hot with an extra piece of beef foot, and finally, the cilantro.
