Ingredients

2 Chicken pieces

4 Medium potatoes

2 Small pieces of pumpkin

1 Whole corn on the cob

1 Carrot cut into strips

1 Small piece of bell pepper

1 Garlic clove

1 Celery stalk

1 Parsley stalk

½ Onion

¾ cup of Assorted vegetables

1 pinch of Salt

1 pinch of Pepper

Cumin

Oregano

Parsley

4 tablespoons of Rice

Preparation

Step 1 : There's no need to make a sofrito, as all the vegetables and chicken release their natural flavors during cooking.

Step 2 : So, in a large pot, place the chicken pieces without skin, then add the whole peeled potatoes, chunks of pumpkin, the corn cut in halves, the whole garlic, as well as the onion and the rest of the vegetables, salt, pepper, cumin, and oregano to taste. Add the whole celery and parsley stalks as well.

Step 3 : Bring to a boil with warm or cold water, and when it starts boiling, add the rice. As it releases its starch, it will naturally thicken the broth.

Step 4 : This cooking process takes approximately 24 minutes over medium heat; you should stir occasionally.

Step 5 : If, in the meantime, the rice, potatoes, or pumpkin are not yet cooked, remove these vegetables temporarily to prevent overcooking, then reintroduce them into the broth once ready.
