Chicken Casserole
Ingredients
1 tablespoon of Oil
½ Onion
1 Chicken breast
1 Green bell pepper piece
1 Sprig of parsley
3 Medium potatoes
1 Butternut squash piece
2 Medium carrots
3 cups of Chicken broth
1 Whole corn
1 pinch of Salt
1 pinch of Pepper
Aji color
Oregano
50 grams of Noodles
Preparation
Step 1 : In a pot, place the oil and the chopped onion into small cubes.
Step 2 : Sauté and add the chopped chicken into small pieces, as well as the garlic to taste.
Step 3 : After a few minutes, begin to add all the chopped vegetables into small cubes one by one.
Step 4 : Add the small cubes of paprika and carrots. Then add the potatoes and butternut squash.
Step 5 : Finely chopped parsley. Mix well and add the chicken broth. If you don't have broth, replace it with a Maggi chicken cube dissolved in a cup of hot water, and add 2 more cups of water.
Step 6 : At this point, optionally, you can add sliced Swiss chard or other vegetables to taste. When the water begins to boil, add the noodles or rice to your liking.
Step 7 : Cook with the lid on for about 20 minutes over medium heat, or if the fire is very strong, lower it to a gentle simmer.
Step 8 : Before turning off the stove, check that the butternut squash and potatoes are well cooked.
