Carbonada
Ingredients
2 tablespoons of Oil
1 Chopped onion
½ kilogram of Cubed black beef
2 Minced garlic cloves
7 cups of Water
1 teaspoon of Oregano
¼ teaspoon of Cumin
2 teaspoons of Salt
2 Beef broth tablets
1 Chopped carrots
1 cup of Chopped squash (zucchini or similar)
1 ½ cup of Grated corn
¼ cup of Green peas
4 Chopped potatoes
¼ cup of Chopped green beans
Preparation
Step 1 : In a pot with oil, brown the meat with the onion.
Step 2 : Then, add oregano, cumin, and salt, and stir everything very well.
Step 3 : Next, add water, the beef broth tablets (dissolved in 1 cup of hot water), carrots, squash, and potatoes.
Step 4 : Bring to a gentle boil until the vegetables are cooked, about 20 minutes.
Step 5 : Finally, add the corn, peas, and green beans, and let cook for an additional 5 minutes.
Step 6 : Serve and garnish with parsley if desired.
