Ingredients

2 tablespoons of Vegetable oil

1 Small onion

2 Garlic cloves

1 Red pepper

1 Green pepper

¾ cup of Mushrooms

½ teaspoon of Ground cumin

½ teaspoon of Ground chili

½ kilogram of Mixed beans

½ kilogram of Tomato

2 cups of Tomato juice

1 cup of Vegetable broth

2 tablespoons of Ground cilantro

½ cup of Sour cream

Chopped cilantro

Preparation

Step 1 : In a skillet, add a little oil, followed by the onion, garlic, red and green peppers, chili powder, ground cumin, and stir very well.

Step 2 : Then add the mushrooms, beans, and keep stirring constantly.

Step 3 : Next, add the chopped tomatoes, broth, chopped cilantro, tomato juice, and stir very well.

Step 4 : Let it boil well, and it’s ready to serve and enjoy.
