Chilean ajiaco is one of the most typical soups of Chile, appreciated for its restorative quality, enjoyed happily after festivities or celebrations.
It has its roots in traditional Chilean cuisine, being considered one of the country's most representative dishes.

Ajiaco
Ingredients
½ kilogram of Meat
¾ kilogram of Julienne-cut potatoes
1 ½ liter of Boiling water
2 Thinly sliced onions
3 tablespoons of Oil
1 tablespoon of Aji de color (coloring chili paste)
2 tablespoons of Chopped parsley
2 Chopped garlic cloves
1 Green aji cut in half
1 pinch of Salt
1 pinch of Pepper
Cumin
Oregano
Preparation
Step 1 : In an ovenproof dish, place the meat (pre-seasoned with 1 garlic clove, pepper, and salt) and roast in the oven.
Step 2 : Then, cut it into approximately 4 cm strips.
Step 3 : In a skillet with oil, fry the previously sliced onions, add the Aji de Color or paprika, the other garlic clove, cumin, oregano, and salt.
Step 4 : Next, add the julienne-cut potatoes, the meat with its juices, and when everything is golden, transfer the entire mixture to a pot.
Step 5 : Add the water and let it simmer for about 30 minutes. Finally, add the green aji and parsley.
