Yogurt Mousse
Ingredients
2 cups of Natural yogurt
¼ cup of Sugar
1 ½ cup of Semi-whipped cream
3 tablespoons of Olive oil
4 Gelatin leaves
½ cup of Raspberries
¼ cup of Blueberries
¼ cup of Blackberry
¼ cup of Strawberries
½ cup of Sugar
½ Star anise
½ Orange zest
1 Cinnamon stick
2 Cloves
1 Ginger root
Preparation
Step 1 : To make the mousse, warm the yogurt with sugar to dissolve the crystals.
Step 2 : Then add the previously hydrated gelatin and the olive oil. Finally, fold in the cream.
Step 3 : Pour into glasses or cups without filling completely. Refrigerate until ready to serve.
Step 4 : For the compote, place all the berries in a bain-marie with sugar, orange zest, ginger, cloves, cinnamon, and star anise.
Step 5 : Cook for two hours over low heat, then let cool.
Step 6 : When serving, place a spoonful of the fruit mixture over the yogurt mousse. Optionally, sprinkle a little merquén just before serving.
