Syrah Turrón
Ingredients
3 Egg whites
1 pinch of Salt
½ cup of Sugar
¾ cup of Syrah
1 Cloves
3 Black peppercorns
½ Cinnamon stick
1 Orange peel
½ cup of Toasted sliced almonds
3 Egg whites
1 pinch of Salt
¼ cup of Sugar
¾ cup of Late harvest
1 Anise star
2 Cardamom pods
1 Lemon peel
Fresh figs or mixed berries
Preparation
Step 1 : Beat the egg whites with a pinch of salt until stiff peaks form. Once the beating begins, do not stop until the process is complete. The meringue will be ready when it is firm and stiff, and when you lift a spoonful upside down, the mixture does not fall.
Step 2 : While beating, make the syrup with the Syrah, sugar, cloves, cinnamon, pepper, and orange peel. Cook until thickened to the consistency of syrup and bubbling. Strain through a fine sieve.
Step 3 : While continuing to beat, and once the meringue is stiff, gradually add the wine syrup until achieving a velvety texture.
Step 4 : Then, using a piping bag, fill the glasses where the dessert will be presented. Add toasted almonds and serve immediately.
Step 5 : Use the same method to make late harvest turrón. In this case, serve with a berry mix or halved fresh figs.
