Rescoldo Tortilla
Ingredients

1 kilogram of Flour
1 cup of Melted tallow
¾ cup of Hot water
1 teaspoon of Salt
1 tablespoon of Baking soda
Preparation
Step 1 : Mix the hot tallow, salt, baking soda, and water. Form a volcano shape and pour the flour inside. Mix.
Step 2 : Knead for a few minutes until a consistent and homogeneous dough is formed. Shape the tortillas.
Step 3 : The Rescoldo Tortilla is cooked in the 'rescoldo,' meaning that a fire is previously made with firewood until it turns into glowing ashes. Then, the tortilla is placed on these ashes and covered with the remaining hot ash.
Step 4 : Monitor to prevent burning and then turn for even cooking.
Step 5 : To check if it's cooked, gently tap and it should produce a hollow sound.
Step 6 : Then, remove from the rescoldo and clean off the ashes with a clean, dry cloth.
Step 7 : It can also be cooked in the kitchen oven, but it would no longer be a 'rescoldo tortilla.'
