Plum Pies
Ingredients
2 cups of Wheat flour
1 teaspoon of Baking powder
¼ teaspoon of Salt
100 grams of Margarine
1 cup of Water
50 grams of Butter
6 tablespoons of Sugar
Hot water
1 ½ cup of Dried, pitted, and cooked plums
3 tablespoons of Lemon juice
½ teaspoon of Lemon zest
3 tablespoons of Sugar
Preparation
Step 1 : Sift the flour, baking powder, and salt; add the margarine and rub it in with your fingertips until the mixture resembles crumbs.
Step 2 : Make a well in the center and pour in the water.
Step 3 : Mix until forming a firm dough.
Step 4 : Roll out with a rolling pin until thin, cover half with softened butter, and dust with flour.
Step 5 : Fold in half, covering the greased half with the other, and make two folds.
Step 6 : Divide the dough in two and roll out until about 3 mm thick.
Step 7 : Place on a greased baking tray and spread the filling over the surface, leaving a border around the edges.
Step 8 : Roll out the other half of the dough and cover the previous one.
Step 9 : Press the edges with a fork to seal and prick the surface of the crust.
Step 10 : Bake in a moderate oven until golden brown.
Step 11 : When removed from the oven, glaze with 6 tablespoons of powdered sugar mixed with one tablespoon of hot water.
