Palmeritas are a puff pastry and honey cake that originated in the desserts of El Quisco and El Tabo, on the central coast of Chile, with a debated origin between an old Italian Bakery and its Spanish counterpart.
Delicious pastry made with puff pastry and sugar, they have their origins in the kitchens of ancient Italian and Spanish bakeries along the country's central coastline.

Ingredients
340 grams of Plain flour
125 grams of Pastry flour
1 ½ teaspoon of Salt
350 grams of Butter
2 teaspoons of Lemon juice
Sugar
Powdered sugar
Preparation
Step 1 : We start by making the fine puff pastry dough. Place 340 grams of plain flour, 125 grams of pastry flour, and 1 ¼ teaspoons of salt in a bowl. Mix these ingredients.
Step 2 : Add 350 grams of very cold butter cut into cubes, gradually incorporating it into the flour mixture until it resembles coarse sand.
Step 3 : Meanwhile, melt 100 grams of butter, then put 2 tablespoons of lemon juice in a cup and fill the rest with cold water.
Step 4 : Add the melted cold butter and the lemon juice mixture to the previous ingredients. Mix lightly, just to combine, do not beat.
Step 5 : Once the mixture is fragmented like that, refrigerate for 30 minutes.
Step 6 : Remove and with a rolling pin, pound the dough to give it a rectangular shape. Fold it into 3 parts, then into 4.
Step 7 : Refrigerate for half an hour and repeat the folding process as before, two more times.
Step 8 : Roll out the dough to a thick layer. Sprinkle with common sugar, and gently press the sugar into the dough with a rolling pin.
Step 9 : Fold the sides towards the center (just 2 turns) and leave a space between them.
Step 10 : Place one side over the other and cut thick slices.
Step 11 : Arrange on a cold baking sheet, and very importantly: press the center of each Palmerita with your finger.
Step 12 : Bake in a preheated oven at 200°C. When they turn a light golden color, sprinkle with more powdered sugar and leave for a few more minutes until they achieve the final color.
