Humitas are one of the oldest dishes in Chile, and they have similarities with Peruvian, Bolivian, and Ecuadorian cuisine.

12 Corn cobs
1 Large onion
1 cup of Milk
1 pinch of Salt
Basil
Preparation
Step 1 : First, carefully cut the corn cob to preserve the husks (leaves or chalas). Blend or grate the corn using a processor; the kernels should be very finely ground.
Step 2 : Chop the onion and sauté until transparent. Add the ground corn, milk, and chopped basil.
Step 3 : Cook if necessary, adding more milk. The mixture is ready when it separates upon making a line with a spatula over the corn paste.
Step 4 : Prepare the husks for filling. You can place a few crossed to make filling easier. Fill, fold the sides, fold the tips, and tie.
Step 5 : Place them in a pot with plenty of water and cook for 30 minutes.
Step 6 : Remove and let drain. Serve and enjoy.
