4 Large egg whites

120 grams of Tagatose

250 grams of Coconut cream

250 grams of Chocolate

1 Ripe pineapple

Step 1 : Heat the coconut cream. When it starts to boil, remove from heat.

Step 2 : Add the chocolate. Mix well the chocolate and cream, and let sit at room temperature for 2 hours, then refrigerate for 30 minutes.

Step 3 : Combine the egg whites with the tagatose and microwave for 20 seconds. Remove and stir until there are no lumps or grains of sugar substitute.

Step 4 : Beat with a mixer until stiff meringue forms.

Step 5 : Whip the cream and chocolate, then fold in the meringue.

Step 6 : Remove the crown of the pineapple and cut it into small cubes.
