Chilean Ring Cookies
Ingredients

450 grams of Flour
200 grams of Sugar
1 teaspoon of Baking powder
Lemon or orange zest
1 Egg plus two yolks
100 milliliters of Milk
30 grams of Melted butter
Preparation
Step 1 : Combine the sugar with the flour and baking powder.
Step 2 : Add the lemon or orange zest.
Step 3 : Mix and incorporate the eggs.
Step 4 : Add the melted and cooled butter to the eggs.
Step 5 : Add this mixture to the flour. First add half the milk and then continue adding milk until a dough forms. Start mixing all ingredients.
Step 6 : Form a dough that initially looks grainy. Bring it together to form a smooth dough. Do not knead, just combine.
Step 7 : Let the dough rest for 30 minutes inside a bag.
Step 8 : When rolling out with a rolling pin, to ensure consistent thickness, place two 8mm-thick chopsticks on each side of the rolling pin.
Step 9 : Cut the rings using a 7cm diameter round cutter and a smaller cutter to remove the center, forming the rings.
Step 10 : Heat the oil; once hot, lower the heat. Add the rings and fry until golden on both sides.
Step 11 : Average cooking time: 3 minutes. Remove the golden rings and place on absorbent paper to absorb excess oil.
Step 12 : Add powdered sugar or icing sugar to taste.
