The Chilean pineapple cake is a very simple and delicious dessert where the predominant flavor is passion fruit.
Their origin dates back to the arrival of German immigrants to southern Chile in the 19th century.

Chilean Pineapple Cake
Ingredients
2 cups of Flour
125 grams of Butter
1 teaspoon of Baking powder
1 cup of Water
1 Egg
1 Egg yolk
1 pinch of Salt
1 Large pineapple
½ cup of Sugar
¼ tablespoon of Ground cinnamon
¼ cup of Flour
1 teaspoon of Lemon juice
Preparation
Step 1 : Sift the flour together with the baking powder into a large bowl.
Step 2 : Add the butter, egg yolk, and a pinch of salt. Mix by hand until you get a sandy mixture.
Step 3 : Gradually add the water until a consistent dough forms, mixing but not kneading.
Step 4 : Divide the dough and set aside one-quarter, then roll out the rest to about 24 centimeters in diameter and 2 to 3 mm thick.
Step 5 : Cover a 22 cm diameter cake mold with the rolled-out dough, leaving about 2 centimeters excess over the edges without cutting.
Step 6 : Roll out the remaining dough and cut into long strips about 0.5 cm wide.
Step 7 : Let rest while preparing the filling.
Step 8 : Remove the pineapple shell and cut it into small, thin slices.
Step 9 : Place the slices in a glass bowl, add the sugar, lemon juice, cinnamon, and ¼ cup of flour. Gently mix all the ingredients.
