Ingredients

½ cup of Milk

4 Egg yolks

½ cup of Granulated sugar

2 tablespoons of Sifted cornstarch

2 tablespoons of Unsalted butter, cut into small cubes

1 pinch of Salt

1 cup of Whipped fresh cream

4 cups of Raspberries or berry mix

1 tablespoon of Fine sugar

Preparation

Step 1 : In a small pot, boil the milk and remove from heat. In a separate bowl, whisk the egg yolks with 1/2 cup of sugar and the cornstarch.

Step 2 : Continue whisking until reaching a light yellow color. Keep whisking gently and gradually add the boiled milk, one spoonful at a time, then more quickly.

Step 3 : Once the milk is fully incorporated, return the mixture to low heat and keep stirring until reaching a thick, creamy consistency.

Step 4 : Remove from heat, add the butter and salt. Mix well and transfer this mixture to a bowl. Cover the surface with plastic wrap to prevent crust formation.

Step 5 : Cool in the refrigerator. Once cooled, gently fold in the whipped cream.

Step 6 : Preheat the broiler or oven to the 'grill' setting. Sprinkle a spoonful of sugar over the raspberries and add half of this fruit to the previous mixture.

Step 7 : Place this mixture in a gratin dish and top with the remaining raspberries. Sprinkle with sugar and broil for 7 minutes or until golden. Serve immediately.
