Spicy Beef and Pepper Stir-Fry
Ingredients
600 grams of Veal tenderloin, cut into thin strips
1 tablespoon of Fresh grated ginger
3 Garlic cloves, chopped, divided
¼ tablespoon of Pepper
¾ tablespoon of Salt, divided
1 cup of Light coconut milk
2 tablespoons of Sugar
1 tablespoon of Spicy sauce
½ tablespoon of Lime zest
2 tablespoons of Lime juice
2 tablespoons of Canola oil, divided
1 Large sweet red bell pepper, sliced into thin strips
½ Medium red onion, thinly sliced
1 Jalapeño chili, seeds removed and sliced thin
4 cups of Fresh spinach
2 Green onions, sliced thin
2 tablespoons of Fresh chopped cilantro
Preparation
Step 1 : In a large bowl, combine the beef with ginger, 2 garlic cloves, pepper, and 1/2 teaspoon of salt; let rest for 15 minutes.
Step 2 : In a small bowl, whisk together the coconut milk, sugar, hot sauce, lime zest, lime juice, and remaining salt until well combined.
Step 3 : In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the beef; stir-fry until no longer pink, about 2-3 minutes. Remove from the skillet.
Step 4 : Sauté the red bell pepper, red onion, jalapeño, and remaining garlic in the remaining oil just until the vegetables are tender and crisp, about 2-3 minutes.
Step 5 : Add the coconut milk mixture; heat through.
Step 6 : Add the spinach and beef; cook until the spinach wilts and the beef is heated through, stirring occasionally.
Step 7 : Sprinkle with green onions and cilantro.
