Ingredients

1 tablespoon of Vegetable fat

1 tablespoon of Butter

1 Finely chopped onion

1 Garlic clove

1 teaspoon of Coloring (colorant)

5 Large potatoes, quartered

250 grams of Pumpkin, chopped

1 cup of Chuchoca soaked overnight

Boiling water

1 pinch of Salt

Preparation

Step 1 : In a pot, place the vegetable fat and butter over medium heat; add the onion, garlic, and coloring. After the onion becomes transparent, add the potatoes and pumpkin.

Step 2 : Then, cover with recently boiled water and cook until the potatoes and pumpkin are tender.

Step 3 : Next, sprinkle the soaked chuchoca (from overnight), stir with a wooden spoon to prevent lumps and mash the potatoes.

Step 4 : Add salt to taste and cook for an additional 10 minutes or until the chuchoca appears cooked.

Step 5 : Remove from heat, garnish with cilantro, and serve. This dish can be complemented with a fried egg, steak, or pan-fried sausages. It is ready to serve.
