It is a traditional and comforting dish, of humble and countryside origins.
It dates back to ancient times, when basic ingredients like beans and noodles were accessible to most households.
Porotos con rienda
Ingredients
1 cup of Burro beans
½ Onion
1 Red bell pepper piece
1 Medium garlic
1 tablespoon of Oil
Parsley
½ Maggi chicken broth cube
1 cup of Diced pumpkin
Noodles
1 pinch of Salt
1 pinch of Pepper
Oregano
Preparation
Step 1 : Pre-soak the beans until tender.
Step 2 : When about 15 minutes remain, add the diced pumpkin and the noodles broken in half.
Step 3 : In a skillet with oil, sauté finely chopped onion, bell pepper, and garlic.
Step 4 : Let it cook for a few minutes over medium heat, then add oregano, salt, and pepper.
Step 5 : Finally, dissolve the Maggi broth cube in a little bit of the bean cooking water and mix with the sauté. Let it cook for another minute to integrate well.
Step 6 : Once ready, add to the beans’ cooking pot and let rest for at least half an hour.
