Ingredients

2 Sausages

4 Pork trotters

250 grams of Pork skin

300 grams of Corn

1 cup of Legumes

4 Onions

4 Garlic cloves

2 Oca tubers

2 Leeks

2 Bell peppers

Squash

Water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : First, in a pot, add pork trotters and pork skin, and boil for 5 minutes.

Step 2 : Then, sauté onions, celery, leeks, and garlic in a pot.

Step 3 : Mix the pork and its skin with the sautéed onion mixture.

Step 4 : Next, add the corn and legumes, and let everything cook for an hour.

Step 5 : Then, add the sausage and squash along with salt, paprika, and pepper, and cook for another hour.

Step 6 : If you want to make a sauce for this, finely chop more onions, 2 additional garlic cloves, and 4 bell peppers, sauté them in well-heated oil, add salt and pepper, and cook for 3 minutes.

Step 7 : Finally, remove the locro from the heat and add the sauce. Serve and enjoy.
