Ingredients

600 grams of Pork belly

1 teaspoon of Merquén

1 teaspoon of Salt

¼ teaspoon of Pepper

¼ teaspoon of Cumin

¼ teaspoon of Ground garlic

¼ teaspoon of Oregano

3 tablespoons of Vinegar

660 grams of Instant polenta

100 grams of Brunoise onion

1 ½ liter of Whole milk

200 grams of Cream cheese

50 grams of Chives

50 milliliters of Heavy cream

250 grams of Tomato concasse

200 grams of Onion

50 milliliters of Olive oil

20 grams of Finely chopped cilantro

20 grams of Chives

20 grams of Red bell pepper

3 tablespoons of Wine vinegar

Merquén

Garlic

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Cut the pork belly crosswise on the fatty side. Marinate with salt, cumin, merquén, garlic, oregano, and vinegar for four hours in the refrigerator. Cook in a medium-high oven (180°C) for 35 minutes.

Step 2 : For the polenta, sauté the onion with olive oil for five minutes until soft; add the milk when it boils and quickly incorporate the polenta, stirring constantly.

Step 3 : Finally, add the cream. Remove from heat and stir in the cream cheese and chives.

Step 4 : Finally, place the mixture into a buttered dish and bake in a medium oven (180°C) for 20 minutes.

Step 5 : For the sauce, sauté first the onion, then the garlic, bell pepper, and tomato for two minutes.

Step 6 : Add the red wine vinegar last, season with salt and pepper, and add merquén. Once off the heat, stir in fresh cilantro.

Step 7 : Serve warm alongside the pork belly and polenta.
