Ingredients

6 Salmon fillets

100 grams of Olive oil

10 milliliters of Lemon juice

40 grams of Dried seaweed mix

2 Chopped garlic cloves

¼ Cachorro de cabra in rings

180 grams of Cooked and chopped loco shells

120 grams of Sea shrimp

40 milliliters of Loco broth

50 grams of Julienne-cut celery

150 grams of Hydroponic watercress

20 grams of Julienne lemon zest

Chopped scallion

Chopped parsley

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Season the salmon with salt, pepper, and lemon juice. Spread one side with the seaweed mixture and sear that side. Before serving, finish cooking in the oven to desired doneness.

Step 2 : To make the pil pil, heat half of the olive oil, add the chopped cachorro de cabra, loco shells, and shrimp with the garlic; deglaze with the loco broth and incorporate the scallion and parsley. Add the remaining olive oil.

Step 3 : Finally, sauté the celery for a minute, then add the watercress and lemon zest.

Step 4 : When serving, place the salmon fillet in the center of the plate, cover with the loco and shrimp pil pil, and top the salmon with watercress and lemon.
