Beans with Corn Mash

Ingredients

¼ kilogram of Beans

3 cups of Water

2 teaspoons of Salt

1 Concentrated broth cube (chicken flavor)

1 tablespoon of Oil

1 Onion, finely chopped

1 Garlic clove, finely chopped

1 Small carrot, grated

½ teaspoon of Aji de color

1 teaspoon of Dried basil

½ Large tomato, finely chopped

1 pinch of Cumin

1 pinch of Pepper

8 cups of Corn, desgranated

Preparation

Step 1 : Dissolve the broth cube in a cup of hot water.

Step 2 : In a large pot, put the beans with the remaining water, salt, and broth. Boil for 15 minutes.

Step 3 : While the beans are cooking, place a skillet over medium heat. Warm the oil and sauté the onion, garlic, and carrot until golden. Add the aji de color and mix.

Step 4 : Then, add the onion mixture to the beans. Cook for about 25 more minutes. Do not let the beans overcook.

Step 5 : While the beans continue cooking, prepare the corn mash. Grind the corn fine. It's easy with a blender, but add the corn little by little to grind it properly.

Step 6 : When the beans are cooked, add the tomato and corn and cook over low heat, stirring frequently. Cook until the corn is tender, about 15 minutes.

Step 7 : Serve the beans in earthenware pots. If desired, add a fried sausage on the side.
