Apricot Chicken

Ingredients

1 Chicken

2 tablespoons of Oil

2 Carrots

2 Medium onions

2 Bay leaves

1 pinch of Salt

1 pinch of Pepper

1 ½ cup of White wine

2 cups of Apricots

1 tablespoon of Flour

Preparation

Step 1 : Wash the chicken thoroughly under running water, dry it, and cut into pieces. Cut each onion into four parts. Slice the carrots.

Step 2 : Heat the oil in a large skillet over medium-high heat. Place the chicken pieces in the skillet and fry for about 5 minutes, or until golden.

Step 3 : Add the onions, pepper, salt, bay leaves, and carrots. Fry for another 5 minutes, then add the apricots, mushrooms, and white wine.

Step 4 : When the mixture boils, cover the pot, lower the heat, and let it simmer for 35 minutes. The chicken should be thoroughly cooked. When done, the chicken will no longer have a red color near the bone.

Step 5 : Once the stew is cooked, uncover the pot and sprinkle the tablespoon of flour. Stir well and cook for 2 more minutes.

Step 6 : Serve this delicious dish with rice and Chilean salad.
