Aji de lengua
Ingredients
1 kilogram of Beef tongue
Water
½ cup of Oil
2 cups of Onion
1 cup of Tomato
½ cup of Aji (chili pepper)
½ cup of Parsley
½ teaspoon of Cumin
1 teaspoon of Oregano
½ teaspoon of Pepper
1 cup of Peas
1 tablespoon of Salt
Preparation
Step 1 : Grind the tongue with a mortar and place it in a pot with water. When it starts to boil, cook for approximately 2 hours.
Step 2 : Remove it from the pot, let it cool, and peel it. Finally, cut it into thin slices.
Step 3 : In a pot with the oil, sauté the onion and add the tomato, chili, parsley, cumin, oregano, pepper, peas, 4 cups of water, and salt.
Step 4 : Mix well and let cook for approximately 1 hour.
Step 5 : When both preparations (tongue and sauce) are ready, add them to a pot, mix well, and cook briefly until the tongue absorbs the sauce flavor.
