Tomatoes with Onion

Ingredients

6 Evenly sized tomatoes

3 Onions

1 tablespoon of Butter or margarine

3 Eggs

1 pinch of Salt

1 pinch of Pepper

Mayonnaise

1 Lettuce for decoration

Preparation

Step 1 : Dip the tomatoes into boiling water and leave them for a while until the skin softens. Peel them, cut a cap on the stem side, and remove the insides with a teaspoon. Add salt and place upside down to let the juice drain.

Step 2 : Peel the onions and dice them, then fry with margarine in a covered skillet over low heat for 5 minutes. Remove the lid and increase the heat until the onions are golden.

Step 3 : Reduce the heat to medium and add eggs, salt, and pepper to the onions. Stir vigorously until cooked.

Step 4 : Let cool, then stuff the tomatoes. Cover with mayonnaise and place on top of lettuce leaves.
