Pumpkin Pudding
Ingredients
Olive oil
2 tablespoons of Butter
½ cup of Finely chopped onion
1 pinch of Sugar
1 teaspoon of Powdered garlic
¼ cup of Red bell pepper
¼ cup of Green bell pepper
1 teaspoon of Whole oregano
1 teaspoon of Ground basil
4 cups of Pumpkin
1 pinch of Sea salt
1 pinch of Pepper
4 Eggs
1 cup of Breadcrumbs
1 cup of Parmesan cheese
Preparation
Step 1 : Heat the butter with the olive oil in a skillet, add the onion and sugar, cook until the onion is soft and translucent.
Step 2 : Add the bell peppers, seasonings, and finally the pumpkin.
Step 3 : Cook for 8 minutes in the skillet and adjust the seasoning.
Step 4 : In a bowl, combine the eggs with the breadcrumbs and stir.
Step 5 : Mix the egg mixture with the pumpkin and vegetable mixture until well combined.
Step 6 : Transfer to a baking dish and sprinkle with Parmesan cheese on top.
Step 7 : Bake for 20 minutes and serve.
