Ingredients

1 Cooked skinless shredded chicken

3 cups of Chopped onion

750 grams of Ground meat

3 teaspoons of Olive oil

1 teaspoon of Dried oregano

3 Minced garlic cloves

2 teaspoons of Salt

Black pepper

2 teaspoons of Paprika or red pepper powder

1 pinch of Cumin

½ cup of Raisins

10 Pitted black olives

3 Hard-boiled eggs, sliced

12 cups of Corn kernels

1 cup of Cream

1 Beaten egg

1 teaspoon of Salt

1 pinch of Ground black pepper

5 Medium-sized basil leaves, julienned thinly

2 tablespoons of Melted butter

8 teaspoons of Sugar

Preparation

Step 1 : In a skillet, heat oil and sauté the onion and minced garlic with oregano, cumin, pepper, paprika, and salt.

Step 2 : Cook until the onion is soft. Then add the ground meat in a single layer and cook only on one side until browned. Using a spatula, turn the meat over and cook the other side.

Step 3 : Once the meat is cooked, mix well to avoid obtaining a watery mixture. Prepare this filling the day before and once cool, store in the refrigerator until assembly.

Step 4 : Using a food processor or blender, grind the corn in parts, adding a little cream at a time, until obtaining a smooth, homogeneous purée. Cook this mixture in a pot, stirring constantly over low heat.

Step 5 : When the mixture has thickened, remove from heat and add the beaten egg and melted butter, stirring until well combined. Season with salt, pepper, add basil, and set aside.

Step 6 : Preheat the oven to 375°F / 185°C.

Step 7 : Grease an ovenproof dish or, if you prefer, 8 individual ramekins. First, fill 1/3 of the dish or ramekin with the 'pino' (meat mixture).

Step 8 : Then add a layer of shredded chicken, followed by raisins, olives, and slices of hard-boiled eggs.

Step 9 : Finally, cover with the corn mixture. For an authentic finish, sprinkle a little granulated sugar over the surface.

Step 10 : Bake for approximately 35 minutes or until golden brown.

Step 11 : Serve immediately.
