2 Bunches of cochayuyo

1 Medium purple onion

Parsley or cilantro

Vinegar

Oil

Lemon juice

1 pinch of Salt

Preparation

Step 1 : Soak the cochayuyo overnight in water with a little vinegar. The next day, rinse the cochayuyo thoroughly.

Step 2 : Then cook in a pot for about 45 minutes or until tender. Let it cool and cut into small cubes.

Step 3 : Next, add the chopped purple onion and stir; then add the chopped cilantro and let it rest for at least 1 hour.

Step 4 : Serve on individual plates.
