The most famous empanadas in Latin America, always present at celebrations. Although originally made with beef, today we prepare them with chicken to add a different touch. How delicious they are!
They are an iconic dish from Chile, present at all celebrations in the South American country.
Originally prepared with beef, nowadays they are made in various ways, including a delicious version with chicken that incorporates unique flavors.
Chicken Chilean Empanadas
Ingredients
1 kilogram of Flour
2 tablespoons of Baking powder
200 grams of Pork fat
1 teaspoon of Salt
1 Egg
½ liter of Milk
½ kilogram of Shredded chicken
1 kilogram of Onion
1 cup of White wine
5 tablespoons of Oil
4 Boiled eggs
Olives
Sweet raisins
1 pinch of Aji color (annatto paste)
1 pinch of Salt
1 pinch of Complete seasoning
Preparation
Step 1 : Start by preparing the dough. To do this, clean a flat surface and make a circle with the flour, placing the warm fat (previously melted) in the center.
Step 2 : Then add the egg and milk gradually and gently mix with your hands until you achieve a smooth homogeneous dough.
Step 3 : Let the dough rest for a few minutes and continue kneading. If the consistency is too dry, keep softening with more milk, and if it’s too soft, add more flour.
Step 4 : After kneading, take portions of dough and make spheres to knead again and form discs (up to 25 cm in diameter). Place them aside on the table and prepare the filling.
Step 5 : Chop the onion medium-fine and sauté over medium heat for 20 minutes, stirring and adding the wine, then season to taste with salt and pepper and add the spices.
Step 6 : Add the shredded chicken and cook over medium heat until just cooked, about 5 to 7 minutes.
Step 7 : Next, assemble the empanadas: Place a little chicken, an olive, a piece of boiled egg, and two raisins on each disc of dough. Remember, you can cut the egg into small pieces or cubes.
Step 8 : Close the disc and brush water on the edges to prevent it from opening during cooking.
Step 9 : Then place the empanadas on a tray previously sprinkled with flour and butter, brush them with egg yolks, and prick a few holes with a fork to prevent puffing.
Step 10 : Bake in a preheated oven at 200°C for 30 minutes or until golden brown.
