Grape Chicha from Curacaví
Ingredients
Grapes
Sugar
Yeast
Five-liter empty bottle
1 One meter of transparent tubing
Preparation
Step 1 : Wash the grapes thoroughly, removing them one by one from the bunches and discarding the stems. Place them in a deep bowl.
Step 2 : Then, wash your hands well to disinfect them and start mashing or squeezing the grapes with your hands.
Step 3 : Once the grapes have released all their juices, leave them in the bowl covered with a cloth to ferment for 48 hours. After this period, strain them through a colander with cloth and squeeze again.
Step 4 : Transfer the mixture into a container for further fermentation. Place it in a 5-liter transparent canister, make a hole in the lid to insert the tubing, and seal with surgical tape to prevent insects from entering. At the other end of the tube, place it in a glass of water to let gases escape and avoid the entry of small creatures.
Step 5 : Keep it in a cool, dark place for several months.
Step 6 : After fermentation, bottle the chicha in sterilized glass bottles and seal them.
Step 7 : Now, you can enjoy homemade sweet wine with a pleasant aroma.
